Spinach Salad with Avocado Dressing

This salad is the great on its own for lunch or a light dinner, or served as an accompaniment to grilled meat.
1 small head broccoli, cut into florets
1 bunch English spinach, washed
1 punnet cherry tomatoes
100 g reduced-fat fetta cheese, cubed
1 small avocado, sliced
1 Tbsp pine nuts
2 Tbsp 99% fat-free natural yoghurt* (for dressing)
1 Tbsp 97% fat-free mayonnaise* (for dressing)
1 small ripe avocado, mashed (for dressing)
2 Tbsp lemon juice (for dressing)
1 freshly ground black pepper, to taste
Steam or microwave broccoli until just tender. Toss spinach and broccoli with remaining salad ingredients.
* If a gluten-free recipe is required, please choose a mayonnaise and yoghurt that are gluten-free.
