Chicken / Poultry & Egg: Chicken/Poultry Dishes: Turkey, Mushroom and Spinach Fettuccine

300 g cooked Ingham Turkey Breast Classic Smoked, roughly chopped or cut into thin strips
350 g fettuccine
1 coating of olive oil spray
250 g mushrooms, thickly sliced
100 g baby spinach leaves, roughly chopped
7 Tbsp parmesan cheese, grated
1 pinch cracked black pepper
Cook pasta in a large saucepan of boiling water, or in the microwave, following packet directions. Drain pasta.
Place turkey onto a microwave proof plate and cover with plastic wrap. Microwave 100% HIGH for 2 minutes or until warmed through.
Meanwhile, spray a non-stick frying pan with olive oil spray. When sufficiently heated, add 1/2 the mushrooms. Cook, over a medium heat, for 2 to 3 minutes on each side, or until golden brown. Transfer to a plate. Cook remaining mushrooms.
Reheat pasta. Add mushrooms, spinach, parmesan cheese and turkey to pasta. Toss until well combined. Add black pepper and serve.
Serve sprinkled with extra parmesan cheese. Serving suggestion not included in the nutritional analysis.
