Chicken / Poultry & Egg: Chicken/Poultry Dishes: Turkey San Choy Bau

Ingredients:
500 g fresh turkey mince
1 coating of olive oil spray
1 2cm piece fresh ginger, grated
2 Tbsp soy sauce, salt-reduced
4 Tbsp hoisin sauce
1 can (200g) water chestnuts, roughly chopped
1 tsp sesame oil
8 spring onions, thinly sliced
1/2 cup fresh coriander leaves
12 iceberg lettuce leaves, washed
Directions:
In a large frying pan, spray olive oil and cook turkey mince for 5 minutes or until well browned. Add ginger, soy sauce, hoisin sauce and water chestnuts. Cook for 2 minutes, stirring to combine ingredients.
Remove from heat, drizzle with sesame oil, stir through spring onions and coriander.
Serve San Choy Bau in a warmed bowl with lettuce cups, allow people to spoon warmed mixture into lettuce, roll up and eat.
