1 cup seedless raisins
3 Tbsp rum
1 cup almond meal
1 cup flaked almonds
1/2 tsp almond essence
1/2 cup cocoa*
1/2 cup Equal® Spoonful (or 12 packets Equal® sweetener)
Soak raisins in rum overnight. Drain and place in a food processor with almonds, essence and Equal.
Process until just combined. Shape mixture into balls and roll in cocoa.
Alternatively, roll the balls in coconut (adjust for added calories and varied nutrition information).
* If a gluten-free recipe is required, please use a gluten-free cocoa.
