Go Mexican with these tasty tortillas.

Ingredients:

150 g low-fat cottage cheese

1 bunch english spinach, trimmed and washed

200 g avocado, roughly chopped

1 cup canned mexican-style beans, drained

3/4 cup corn kernels, drained

2 large tomatoes, coarsely chopped

1/2 cup red onion, diced

1 medium zucchini, coarsely grated

8 Old El Paso herb tortillas

150 g low-fat mozzarella cheese, grated


Directions:

Blend or process cottage cheese and spinach until smooth. Combine avocado, beans, corn, tomato, onion and zucchini in a separate bowl.

Place eight tortillas on an oven tray lined with non-stick baking paper. Spread the spinach mixture evenly over half of each tortilla, leaving a 1" border around the edge. Place avocado mixture evenly over spinach mixture. Fold over tortilla to encase the filling. Press around edges to seal.

Sprinkle mozzarella over the top and place under a preheated grill until cheese just melts and browns lightly.

Variations:

Serve tortillas with a fresh, green salad.
