Ingredients:150 g low-fat cottage cheese 1 bunch english spinach, trimmed and washed 200 g avocado, roughly chopped 1 cup canned mexican-style beans, drained 3/4 cup corn kernels, drained 2 large tomatoes, coarsely chopped 1/2 cup red onion, diced 1 medium zucchini, coarsely grated 8 Old El Paso herb tortillas 150 g low-fat mozzarella cheese, grated Directions:Blend or process cottage cheese and spinach until smooth. Combine avocado, beans, corn, tomato, onion and zucchini in a separate bowl. Variations:Serve tortillas with a fresh, green salad. Author:
