
Mushroom & Cheese Strudel

Ingredients:2 brown onions, thinly sliced 2 garlic cloves, crushed 2 Tbsp honey 500 g button mushrooms, sliced 100 g lite brie cheese, chopped 2 Tbsp flat-leaf parsley, chopped 1 salt & ground black pepper, to taste 2 sheets frozen ready roll reduced-fat puff pastry 1 medium egg, lightly beaten Directions:Preheat oven 200ºC. Lightly spray pan with cooking spray, and heat over medium heat. Add onions and garlic and cook, stirring often for 10 minutes or until soft and light golden. Variations:Serve with a green salad.
