Ingredients:
450 g can of Golden Circle Whole Baby Beets
1 green capsicum, 140g
1 red capsicum, 140g
600 g baby yellow squash
1 medium onion (120g) cut into eighths
100 g mushrooms, halved
1 Tbsp olive oil
8 skewers
Directions:Cut capsicum and squash into even bite-size pieces and thread onto skewers with baby beets and remaining vegetables.
Heat grill or griddle plate, brush skewers with a little oil and cook 3-4 minutes until cooked to taste.
Variations:
Serve as a side dish with rice and barbecued meats.
