A lovely mixture of flavours, topped off with french onion delight.

Ingredients:

4 medium potato, peeled

1 large sweet potato

250 g frozen spinach

1/2 packet of french onion soup mix

250 mL skim milk

1 cup grated cheese, reduced-fat


Directions:

Preheat oven to 180° Celsius. Thaw spinach. Blend milk and french onion soup mix until well combined.

Chop potatoes and sweet potato into thin slices. In a casserole dish, put a layer of potato, then sweet potato and then spinach.

Pour over a thin layer of the French onion milk mix. Repeat layers until all ingredients are used, finishing off with any remaining milk mixture.

Top with grated cheese to lightly cover. Bake in oven for 40 to 45 mins, or until potatoes are cooked and cheese is golden. Serve hot.

Microwave Directions:

As above, but microwave on high for 20-25 mins.

This is really delicious.. Everyone in the household loved it and asked if I could make it again the next night.. Quick and easy. :-)

This is beautiful! I substitute some of the milk for Light & Creamy Evaporated milk. Its is a great lunch to take to work, I usually have a can of tuna with it for a really filling meal.
