
Eastern Potato and Lentil Bake

Ingredients:1 cup red lentils 15 mL olive oil 1 onion, chopped 2 cloves garlic, chopped 1 tsp curry powder 1 tsp ground coriander 1 tsp ground cumin 1 stick celery, chopped 2 cup chopped pumpkin 4 Delaware potatoes, peeled, diced and cooked 1 Tbsp soy sauce 1 freshly ground black pepper to taste 1/2 cup extra light sour cream 60 g low-fat grated cheese Directions:Place red lentils in a saucepan.
