Ingredients:
2 Royal Blue potatoes, skin on
2 Tbsp tomato paste
1 cup low-fat ricotta cheese
1 Tbsp finely chopped coriander
2 field mushrooms, sliced
1 green capsicum, sliced
2 red chillies, seeded and finely sliced (optional)
1/2 cup low-fat grated Parmesan or romano cheese
Directions:Slice potatoes lengthwise, about 0.5cm thick. Arrange in a single layer on a lightly greased pizza tray.
Spread tomato paste over potato slices. Spread ricotta cheese over. Top with the remaining ingredients, finishing with the parmesan.
Bake in a hot oven (200ºC) for 30 minutes. Serve immediately.
