This delicious vegetarian falafel is baked, not fried, so it's a great low-fat alternative to fried falafel.

Ingredients:

1/4 cup buckwheat

7 oz cooked chick peas

4.20 oz finely chopped onion

2 finely chopped shallots

3 finely chopped garlic cloves

1 Tbsp chopped parsley

1 Tbsp chopped mint

1 egg

1 Tbsp lemon juice

1/4 cup sesame seeds

1 black pepper, to taste

1 fresh coriander, to taste


Directions:

Soak buckwheat in hot water for 10 minutes then drain well.

Finely grind or blend the chickpeas and add all other ingredients, except the sesame seeds. Mix thoroughly.

Cover and chill for 1 hour.

With wet hands, shape mixture into individual patties and roll them in sesame seeds.

Let sit a further 10 minutes. Bake in a moderate oven until golden brown.

Variations:

Serve with hummus and tabouli.

I found these hard to form then when cooked, very dry - definitely need to be served with the hommus and salad. I actually also tried tzatzike dip which went well.
