Try this bruschetta as a delicious brunch idea or as a tempting lunch.

Ingredients:

24 asparagus spears, trimmed

2 Tbsp extra virgin olive oil

1 cup avocado

1 Tbsp fresh lime juice

1/2 tsp Tabasco sauce (optional)

8 slices Italian bread

1 clove garlic, peeled

1/4 cup coriander leaves

1 pinch cracked pepper and sea salt to season


Directions:

Lightly spray the asparagus with cooking spray. Heat a grill pan or barbecue over a high heat and grill asparagus for 1 minute on either side. Remove from heat.

Blend the avocado, lime juice, 1 tablespoon oil and tabasco, if using, in a food processor until smooth.

Rub the bread with the garlic clove, brush lightly with 1 tablespoon of oil and toast or grill until golden.

To assemble the bruschetta, spread the toast thickly with avocado dip, top with coriander leaves and then the grilled asparagus. Season with salt and pepper.
