A mouth-watering pizza with a light, crunchy base.
Suggestions:
If using fresh tomatoes, place in a bowl and pour boiling water over. Allow to stand 1-2 minutes.
Drain tomatoes and plunge into cold water. Skin should readily peel off.

Ingredients:
300 g tomatoes, fresh or tinned
1 Lebanese bread, large
3 spring onions, chopped
50 g green capsicum (1 small), chopped
1/4 tsp dried basil and oregano
1 tsp tomato paste, no added salt
45 g mushrooms, chopped
3 artichoke hearts, tinned
60 g mozzarella cheese, grated
Directions:
Chop tomatoes roughly.
Put tomatoes, spring onions, capsicum and spices in a non-stick pan.
Bring to the boil and simmer for 15-20 minutes.
Allow sauce to cool. Spread sauce over bread.
Add layer of mushroom and asparagus or chopped artichokes.
Top with grated cheese.
Bake for 15 minutes in a hot oven. Serve hot.
Variations:
Non-Vegetarian Pizza: Add chopped anchovies (6 thin fillets adds 15 calories per serve) or 2 slices lean ham, chopped (adds 20 calories per serve) to the topping.
