Whip up a warming curry for a fast and fabulous family filler!

Ingredients:

1 Tbsp olive oil

1 tsp gound cumin

1/2 tsp gound turmeric

1 clove garlic, crushed

10 1/2 oz pumpkin, cut into 3cm chunks

5 baby potatoes

14 oz can of diced tomatoes

14 oz can of Edgell Brown Lentils, drained

2 Tbsp fresh coriander leaves, chopped


Directions:

Heat oil in a large frying pan. Add cumin, turmeric and garlic and saute for 1 minute.

Add pumpkin, potato and tomatoes, mix, cover and simmer for 10 minutes.

Add drained lentils, and cook for a further 5 minutes or until pumpkin and potato pieces are cooked through.

Garnish with coriander leaves.

Variations:

If you like a touch of fire in your curry, add a pinch of cayenne.

Did this in my slow cooker and it was very yummy . I did add the lemon at the end too..decided I could have a pieces of garlic bread with it as so low on cals.. will do again. My 11 yr old loved it too

Easy, fast, economical, and - most importantly - TASTY! Would definitely make again, probably adding onions next time, as I love onions. Gotta love dishes where there isn''t a tonne of washing up afterwards!

mmmm really really good! Hardly any fat and actually really delicious, like Becy I thought it might be bland, but it was awesome!

Love this. Made a patch yesterday, and family demanded more today. Changed the recipe to have 1/2 lentils and 1/2 chickpeas. Also a good helping of dried chili flakes. Yummy!

This dish lacked flavour. The lentils also didn''t go with the potato and pumpkin.

Oh forgot to mention... I added a squeeze of lemon juice at the end. Works wonders with curries I find.
