Turkey with the Works

Guest chef Jane Barnes has put together this mouth-watering turkey recipe. Great for those who want to stay with tradition this Christmas but would prefer less fat and less calories.

Ingredients:

1 turkey buff or stuffed breast roll

8 medium potatoes, just cooked in boiling water

1 cup cranberry sauce

1 cauliflower

1 brocolli

50 g toasted almonds

2 cup gravy made from gravy mix


Directions:

Heat oven to 220 degrees C.

Place dressed turkey in hot oven and cook according to directions. Do not overcook and allow at least 20 minutes to 'rest' before serving and cover an oven tray with oven-bake paper.

When the turkey has been removed, cut the pre-cooked potatoes into quarter wedges, place on the tray and spray with olive oil spray. Bake in the oven, turning and re-spraying if necessary, for about 20 minutes until crisp. Meanwhile, steam the broccoli and cauliflower for two-three minutes until soft. Toss toasted almonds through the steamed vegetables. Serve immediately with turkey, potatoes and gravy.

Serve cranberry sauce separately.

Variations:

Instead of making your own gravy, use a commercial gravy mix. This will be much lower in fat. You can also pre-prepare stuffing to accompany the turkey. When you make the stuffing, use milk and eggs to combine the ingredients, instead of butter or oil.
