
Tomato and Lentil Soup

Ingredients:1 Tbsp olive oil 1 onion, chopped 1/2 cup red lentils 2 tomatoes, quartered 1 red chilli, sliced 4 cup vegetable stock, reduced-salt 2 tsp lemon pepper 1/4 cup tomato paste Directions:Heat oil in a heavy based saucepan. Add onion and cook until soft. Add lentils, tomatoes, tomato paste, chilli and stock. Simmer for 20 minutes. Variations:Serve with fresh crusty bread, if desired.
