Chilli and lemon pepper give this tomato and lentil soup a heady aroma!

Ingredients:

1 Tbsp olive oil

1 onion, chopped

1/2 cup red lentils

2 tomatoes, quartered

1 red chilli, sliced

4 cup vegetable stock, reduced-salt

2 tsp lemon pepper

1/4 cup tomato paste


Directions:

Heat oil in a heavy based saucepan. Add onion and cook until soft. Add lentils, tomatoes, tomato paste, chilli and stock. Simmer for 20 minutes.

Remove skins from tomatoes. Add lemon pepper to taste, and serve hot.

Variations:

Serve with fresh crusty bread, if desired. Serving suggestion not included in nutritional information.

I love lemon pepper on my steamed veggies make them much more delicious.

never had lemon pepper before. interesting :) was a nice dinner and was suprisingly filling!! cant complain for 97 cals per serve !! ;)
