
Potato and Zucchini Soup

Ingredients:1 Tbsp olive oil 1 onion, chopped 1/4 tsp curry powder* 2 large Ruby Lou potatoes, chopped 1 zucchini, chopped 2 cup vegetable stock, reduced-salt* 2 cup reduced-fat milk Directions:Heat oil in a large saucepan. Add onion. Cook until tender. Add curry powder and cook for a further 1 minute. Add potato, zucchini and stock. Bring to boil. Reduce heat. Variations:
