Ingredients:

3 fat-free slices ham, chopped

1 onion, chopped

3 stalks celery, thinly sliced

4 Mondial potatoes, diced

4 cup chicken stock, reduced-salt

2 chicken breasts, skin removed

2 cup fresh sweet corn kernels

2 cup skim milk

1 freshly ground black pepper

4 tsp plain flour


Directions:

Place ham, onion, celery, potatoes, stock and chicken in a large saucepan. Cover. Bring to boil. Reduce heat. Simmer for 20 minutes or until chicken is cooked. Remove chicken. Set aside.

Add corn, milk and pepper. Simmer for a further 5 minutes. Cut chicken into very small pieces. Return to saucepan. Add flour to thicken. Serve immediately.
