This hearty, flavoursome recipe is a delicious way to warm up.

Ingredients:

1 Tbsp extra light olive oil

3 potatoes, peeled and chopped

2 celery sticks, sliced

1 onion, chopped

1 red capsicum, chopped

1 tsp thyme leaves

2 cup chicken stock, salt reduced

2 cup skim milk

250 g fresh mushrooms, sliced

1/2 cup light sour cream

1 pinch of salt & pepper, to taste


Directions:

Heat oil in a large pan. Cook potatoes, celery and onion until onion is soft.

Add capsicum, thyme, stock, salt and pepper. Cook until potatoes are tender. Add milk. Simmer for 10 minutes.

Add remaining ingredients. Blend or process in batches until smooth. Simmer until just heated through.

Variations:

Serve with crusty bread, if desired. Serving suggestion not included in nutritional information.
