
Easy Leek and Potato Soup

Ingredients:1 Tbsp vegetable oil 2 leeks, washed and sliced 2 onions, sliced 2 cloves garlic, crushed 5 Mondial potatoes, peeled and sliced 2 cup chicken stock, salt-reduced* 1/4 cup chopped parsley 1 freshly ground black pepper Directions:Brush the base of a frying pan with oil. Sauté leeks, onions and garlic for about 3 minutes. Add a little water if necessary. Add potatoes, chicken stock and pepper. Bring to the boil. Cover and simmer for about 30 minutes.
