A delicious soup for the crockpot!

Ingredients:

2 Tbsp butter, light

3 swedes, peeled and cubed

2 stalks celery, sliced

1 onion, chopped

1 1/2 cup chicken stock, salt-reduced

1 Tbsp fresh herbs

2 1/2 cup milk, low-fat

2 cup button mushrooms

1/2 cup sour light cream

1 freshly ground black pepper, to taste


Directions:

Melt butter in a large saucepan. Sauté swedes, celery and onion until onion is tender. Stir in stock, herbs and pepper. Bring to boil.

Reduce heat. Simmer for about 10 minutes. Puree. Add milk and mushrooms. Return to saucepan. Bring to boil. Simmer for a further 5 minutes. Serve with a swirl of sour light cream and chopped fresh parsley on top.
