This soup not only tastes great, but is very low in fat and high in fibre.

Ingredients:
1 tsp olive oil
1 1/2 tsp cumin seeds
1 large onion, chopped
1 clove garlic, crushed
1/2 kg broccoli florets
1/2 kg cauliflower florets
1 vegetable stock cube
4 cup water
1 1/2 cup soy or dairy milk
1/4 tsp salt (optional)
Directions:
Heat oil in a large saucepan. Add cumin seeds, onion and garlic and sauté until soft. Add broccoli, cauliflower, stock cubes and water. Bring to boil, then reduce heat, cover and simmer for 15 minutes.
Remove from heat. Place in a blender and puree until smooth.Add milk and salt and process until combined.
Return to saucepan and reheat. Serve garnished with continental pasley.
Variations:

By: neish93 - 2011-07-18 i sauted 2 onions and 2 tablespoons of jar minced garlic, added heaps of broccoli & cauliflower along with 2vege stock cubes and 8cups water (almost enough to cover). blended with a hand held blitzer, added 375ml evaporative milk, 1/2cup cream and 1/2cheese to help thicken and flavour. salt & pepper. was delicous!

By: mckenzin - 2008-09-06 Yummy! I added Lite n'' Creamy Evaporated milk instead of whole milk which made it really creamy. This added about 30 extra calories per serve but heaps more calcium & protein. I''ll definately be making this one again.
