A creamy, low-fat corn and potato soup.

Ingredients:

2 medium potatoes, cubed

1 cup water

2 tsp oil

1 large onion, chopped

1 Tbsp flour

2 cup Sanitarium So Good Lite soy drink

10 g vegetable stock cube, crumbled

440 g can corn kernels, drained

440 g can creamed corn

1 Tbsp chopped parsley


Directions:

Place cubed potato and water into a saucepan and cook (or microwave on HIGH [100%] until tender). Reserve liquid.

Heat oil in a large saucepan. Sauté onion until soft (or microwave on HIGH [100%] for 2 minutes).

Add flour and remove from heat.

Gradually add So Good Lite, potato, reserved potato water, stock cube, corn kernels and creamed corn.

Stir over medium heat until mixture boils and thickens (or microwave on HIGH [100%] for 12 minutes, stirring after every minute).

Stir in parsley and serve hot.

Variations:

Serve with bread, if desired. Serving suggestion and garnish not included in nutritional information.
