This salsa makes a flavoursome accompaniment to barbecued lamb.

Ingredients:

6 medium plums, skin on

1/2 red onion

2 Tbsp unsalted lightly toasted macadamias

2 Tbsp freshly chopped mint

1 - 2 teaspoons finely grated fresh ginger

1 Tbsp plum sauce

1 tsp soy sauce

1 tsp rice wine vinegar


Directions:

Wash the plums. Cut each plum in half through to the stone. Twist halves in opposite directions to separate them. Remove stones with a teaspoon

Cut flesh cut into large dice. Dice the onion into similar size pieces.

Add remaining ingredients and toss to combine. Cover and chill.

Variations:

Makes a great accompaniment to barbecued or grilled lamb (cutlets, backstraps, fillets). Serving suggestion not included in nutritional information.
