
Potato and Vegetable Pie

Ingredients:1 onion, finely chopped 2 cloves garlic, crushed 1/2 cup red wine 4 tomatoes, chopped 2 cup chopped pumpkin 1 fresh chilli, finely sliced 1 freshly ground black pepper 2 cup pre-cooked (or tinned) red kidney beans 4 large potatoes, peeled, cooked & mashed 1/2 cup reduced-fat ricotta cheese 1/2 cup grated extra light cheese Directions:Place onion and garlic in a saucepan with red wine. Cook until just soft, about 2 minutes. Add tomatoes, pumpkin, chilli and black pepper. Cover. Cook for about 10 minutes. Variations:Serve with a salad and fresh crusty bread, if desired.
