Parmesan Asparagus Spears

Ingredients:

2 bunches asparagus spears, trimmed

2 Tbsp extra virgin olive oil

2 tsp fresh lemon juice

1 Tbsp lemon rind or zest

1/4 cup parmesan cheese, shavings

1 cracked black pepper to season


Directions:

Steam the asparagus in an asparagus steamer or in a bamboo steamer over a wok of simmering water for 2 minutes, until they are bright in colour and just tender. Remove the steamer from the heat & drain the asparagus.

In a saucepan, over a low heat, warm the oil, lemon juice & rind. Pour over the asparagus & garnish with parmesan shavings. Season with cracked black pepper & serve immediately.

Variations:

Serve as an entree or as an accompaniment to grilled meat or fish.
