
Cheesy Okra and Mushrooms

Ingredients:2 rashers bacon, trimmed of fat and chopped 1 onion, chopped 2 celery stalks, chopped 1 Tbsp tomato paste 1 cup chicken or vegetable stock* 3 cup sliced field mushrooms 3 cup halved okra pods 1/2 cup chopped parsley 1 freshly ground black pepper 1/2 cup cubed fetta cheese Directions:Heat a large saucepan. Add bacon. Cook for about 2 minutes, stirring constantly. Add onion and celery. Cook for about 3 minutes. Mix together tomato paste and stock. Add to pan. Cover saucepan. Cook for about 5 minutes. Add mushrooms and okra. Cover saucepan. Variations:* Ensure that this ingredient is gluten free, if a gluten free diet is required. If vegetarian, use vegetable stock and omit bacon. Author:
