Ingredients:

2 rashers bacon, trimmed of fat and chopped

1 onion, chopped

2 celery stalks, chopped

1 Tbsp tomato paste

1 cup chicken or vegetable stock*

3 cup sliced field mushrooms

3 cup halved okra pods

1/2 cup chopped parsley

1 freshly ground black pepper

1/2 cup cubed fetta cheese


Directions:

Heat a large saucepan. Add bacon. Cook for about 2 minutes, stirring constantly. Add onion and celery. Cook for about 3 minutes. Mix together tomato paste and stock. Add to pan. Cover saucepan. Cook for about 5 minutes. Add mushrooms and okra. Cover saucepan.

Simmer slowly for about 15 minutes or until okra are tender. Add extra stock if necessary. Stir through parsley, pepper and cheese. Cook for about 1 minute. Serve piping hot.

Variations:

* Ensure that this ingredient is gluten free, if a gluten free diet is required. If vegetarian, use vegetable stock and omit bacon.
