These potatoes will make a tasty addition to your barbeque

Suggestions:

Tip: The potatoes can be flattened a little with a potato masher before barbecuing.

Ingredients:

500 g potatoes (about 4 large), Royal Blue or Ruby Lou, unpeeled

2 Tbsp fresh thyme

2 Tbsp olive oil

1 tsp coarse sea salt


Directions:

Boil, steam or microwave potatoes until just tender. Drain.

Place potatoes in a bowl with the oil and thyme leaves.

Marinate for 1/2 hour. Sprinkle with salt.

Cook potatoes on a preheated barbecue until golden brown on each side.
