Enjoy this simple warm pork salad with fat-free French dressing!

Ingredients:

400 g lean pork fillets

4 small Josephine pears

4 cup mixed lettuce leaves, washed

6 spring onions, chopped

1/4 cup fat-free French dressing

1 freshly ground black pepper, to taste

1/2 cup roasted peanuts


Directions:

Grill or roast pork fillets until just cooked. Slice diagonally into strips.

Cut pears in half, remove cores and thinly slice.

Place lettuce and spring onions in a serving bowl. Arrange pears and pork over the top. Sprinkle with dressing and pepper to taste. Garnish with nuts.

Serve immediately.
