If you're looking for a delicious meal that is quick, easy and bursting with flavour, try this couscous salad, it's sure to please!

Ingredients:

2 cup couscous

2 1/2 cup boiling water

20 g chicken flavoured stock cube, crumbled

2 cup diced sweet potato (kumera), roasted

1 Tbsp olive oil

1 bunch asparagus, steamed & sliced

1/3 cup Sanitarium Pistachio Nut (or other nuts of your choice)

3 Tbsp Sanitarium Macadamia Nut Oil (or another oil of your choice, such as olive oil)

3 Tbsp rice vinegar

1 Tbsp chopped fresh coriander

1/4 tsp salt


Directions:

Toss sweet potato in oil. Place on a baking tray and bake in a hot oven (200°C) for 15 minutes or until golden.

Place couscous in a bowl. Dissolve stock cubes in boiling water and pour over couscous. Cover and stand until liquid is absorbed. Stir with fork.

Toss warm couscous, roasted sweet potato and asparagus together.

Combine dressing ingredients and gently mix through the couscous. Serve garnished with pistachio nuts.
