Ingredients:

1 Tbsp oil

2 cloves garlic, crushed

1 meat from cooked lean chicken breast, chopped

1/4 cup coarsely chopped peanuts

2 cup snow peas, trimmed

2 spring onions, chopped

1 tsp brown sugar

1 tsp soy sauce

5 plums, stone removed and sliced

1 lettuce leaves, washed

1 chopped coriander for garnish


Directions:

Heat oil in saucepan. Add garlic. Sauté until soft.
Add chicken, peanuts, snow peas, spring onions, brown sugar and soy sauce. Stir to heat through. Add plum slices. Toss gently.

Serve immediately on a bed of lettuce leaves. Sprinkle with chopped coriander to garnish.
