
Waldorf Salad

Ingredients:3 large apples (red & green), cut into chunks 2 sticks celery (60g), thinly sliced 1 orange, sectioned 30 g walnuts 1/4 tsp 'Lite' salt 1/4 tsp pepper 2 Tbsp orange juice 2 Tbsp lemon juice 1/2 cup natural lowfat yogurt 4 lettuce leaves 12 thin red apple wedges, for garnish Directions:Combine apples, orange, celery and walnuts. Season with lite salt and pepper. Mix lemon juice, orange juice, yogurt and add to apple mixture. Variations:If you're partial to avocados and can afford the extra calories and fat, then replace the yogurt, lemon juice and orange juice with the Avocado Dressing recipe.
