Turkey, vegetables and pasta in a light dressing.
250 g Elbow Pasta Shapes, uncooked
200 g lean turkey breast, diced, cooked
1/4 cup chopped onion (30g)
1 cup diced carrot (140g)
1 cup frozen peas, thawed (140g)
1 Tbsp olive oil
2 Tbsp white vinegar
1/4 tsp pepper (or to taste)
1/4 tsp salt
Cook pasta according to package directions. Drain well after rinsing with cold water. Set aside.
Add your favourite vegetables for added flavour.
