
Sweet Capsicum & Pineapple Salad

Ingredients:1 small to medium pineapple, cut lengthwise into quarters 1/2 red sweet capsicum, cut into 2cm strips 1/2 green sweet capsicum, cut into 2cm strips 1/2 orange sweet capsicum, cut into 2cm strips 1 small red onion, chopped 80 mL vegetable oil 60 mL white wine vinegar 2 cloves garlic, crushed 1 small red chilli, finely sliced 1 small green chilli, finely sliced (optional) 1 Tbsp toasted sesame seeds 1 tsp sea salt and pepper (optional) Directions:Trim the core away from the pineapple, then cut off the skin. Cut the flesh into triangular chunks. Place in a bowl with the sweet capsicums and red onion and combine well. Dress with vinaigrette and toss to combine. Author:
