A creamy side dish.

Suggestions:

Serve with greens, cold meats or seafood and crusty fresh bread.

Ingredients:

400 g tub Golden Circle Fresh Rockmelon Pieces

1 cup diced celery

1/2 cup lowfat natural yoghurt

1/2 cup lowfat mayonnaise

1/4 cup glace ginger, chopped

1/2 cup slivered almonds or pinenuts, toasted

1 tsp mixed spice


Directions:

Combine all ingredients excluding the fruit and celery, mix well.

In a salad bowl combine fruit and celery and gently fold through dressing.

To serve, sprinkle with extra almonds and mixed spice then chill well.
