Rice and vegetables in a sunflower dressing.

Ingredients:

1 cup brown rice

1 medium carrot, diced

1/4 small green capsicum, diced

4 kg shallots, sliced

1 celery stick, diced

1/2 cup canned corn kernels, drained

1 small handful sunflower seeds

1/2 tsp vegetable salt (or to taste)

1/4 tsp cayenne pepper (or to taste)

1 tsp soy sauce

15 mL sunflower oil


Directions:

Boil the rice; set aside to cool.

Combine vegies, sunflower seeds, oil, salt and soy sauce in a bowl.
Stir through rice; mix thoroughly.
