Ingredients:
14 oz fresh lima bean
2 ripe tomatoes, finely diced
1 tsp Equal Spoonful
1 cracked pepper to taste
2 tsp cider or wine vinegar
1/2 spanish onion, finely diced
2 cup torn lettuce leaves
1 stalk celery, thinly sliced
2 Tbsp chopped walnuts
1 Tbsp fresh chopped basil
1 Tbsp fresh chopped mint
1 Tbsp fresh chopped parsley
2 Tbsp lemon juice
1 Tbsp olive oil
Directions:
Blanch beans in boiling water or low salt stock until tender, about 10 minutes.
Drain, rinse and cool. Sprinkle the tomato with the Equal or sugar, pepper and vinegar and set aside. Toss together the beans, tomato, onion, lettuce, celery and walnuts.
Whisk together the fresh herbs, lemon juice and oil and lightly toss through the salad. Serve as a side dish or as a light meal with crusty bread.
