A light version of this old favourite from the 'Healthy Food Fast' cookbook.

Ingredients:

1 cucumber, peeled, seeded and cubed

1 red onion, sliced

4 ripe tomatoes, cut into wedges

12 black olives, pickled in brine

4 3/8 oz reduced-fat fetta cheese, diced

1 spring onion, sliced

2 cup English spinach leaves, washed and drained

2 Tbsp parsley, chopped

4 Tbsp reduced-fat Greek salad dressing


Directions:

Combine ingredients in a serving bowl and mix well.
