
Dill Mustard Potato Salad

Ingredients:2.21 lb Mondial potatoes 51 fl. oz chicken stock, reduced-salt 17 fl. oz water 3 stalks celery, sliced 1 red onion, thinly sliced 1/2 cup light sour cream 1/2 cup fat-free mayonnaise 3 Tbsp Dijon mustard 2 Tbsp chopped fresh dill 1/2 bunch chives, chopped 1 freshly ground black pepper Directions:Cook potatoes in stock until just tender. Drain and rinse in cold water. Slice potatoes into 1cm thick slices and arrange in a salad bowl with the celery and onion.
