Ingredients:

1/2 cup rice vinegar (or distilled white vinegar)

3 Tbsp Equal® Spoonful (or 4.5 packets Equal® Sweetener)

3 cup unpeeled sliced cucumber, quartered (about 2 medium)

2 cup chopped tomato (about 1 large)

1/2 cup chopped red onion

1/4 tsp salt & pepper, or to taste


Directions:

Combine vinegar and Equal. Add cucumbers, tomato and onion.
Season to taste with salt and pepper, mix well.

Refrigerate, covered, at least 30 minutes before serving.
