This wonderful creation is really simple and tastes delightful!

Ingredients:

2 pears, sliced

2 apples, sliced

1 red Spanish onion, sliced

100 g reduced-fat cheese, sliced

1/3 cup sliced almonds

1/2 cup extra light sour cream*

1/2 Tbsp grated orange rind

1/4 cup orange juice

1/4 tsp curry powder*


Directions:

Combine all salad ingredients in a salad bowl.

Combine dressing ingredients (sour cream, grated orange rind, orange juice and curry powder) in a small jar. Shake well to combine.

Toss dressing gently through the salad. Serve with grilled chicken and fresh crusty bread, if desired.
