Enjoy the taste of Asia in this pork and mushroom dish.

Suggestions:

* Char siew sauce is a thick, sweet Asian sauce. Hoi sin sauce is a suitable replacement.

Ingredients:

1/3 cup char siew sauce*

2 Tbsp mirin

1 lime, juiced

2 1/2 Tbsp peanut oil

300 g mushrooms, sliced

300 g pork fillet, trimmed and thinly sliced

200 g snow peas, trimmed

1 Tbsp water


Directions:

Combine char siew sauce, mirin, lime juice and 3 teaspoons of peanut oil in a jug and mix well. Place mushrooms and pork into separate bowls. Pour half the marinade over mushrooms and remaining marinade over pork. Toss well to coat.

Heat a wok over high heat. Add 1 tablespoon oil and heat until hot. Add the pork and stir-fry for 5 - 6 minutes or until tender. Remove. Add remaining 3 teaspoons oil and mushrooms to wok and stir-fry for 1 minute. Add snow peas and water, cover with a lid and cook for 20 seconds. Add pork and stir-fry for 30 seconds or until heated through.

Variations:

Serve with steamed rice, if desired. Serving suggestion not included in nutritional information.
