For an impressive and out-of-the-ordinary meal, try pork medallions with fresh red grapefruit.

Ingredients:

1/2 tsp salt, to season pork

2 g cracked black pepper, to season pork

1 Tbsp unsalted butter

2 Tbsp pink peppercorns

450 g pork medallions

1 cup port

1 cup red grapefruit juice (approx. 2 red grapefruit)

2 medium red grapefruit, segmented without membrane

400 g steamed green beans

400 g mashed sweet potato, made with 1/2 Tbsp butter and 80 mL skim milk


Directions:

Season pork medallions with cracked pepper and salt. Melt 1 tablespoon of butter in a heavy-based fry pan over a medium heat until bubbling and golden. Add peppercorns, swirl pan to combine ingredients. Cook pork for 3 minutes on either side for rare meat, longer for well done.

Remove meat from pan, let rest on covered plate. Deglaze pan with wine or port: Add port, simmer for 2 minutes, add red grapefruit juice, simmer for 15 minutes or until sauce thickens.

Place the pork medallions on serving plates along with the mashed sweet potato and beans. Top the pork with red grapefruit and drizzle the sauce over. Serve.

Variations:

Red wine can be used in place of port. Variation is not included in the nutritional analysis.
