
Red Grapefruit and Pork Medallions

Ingredients:1/2 tsp salt, to season pork 2 g cracked black pepper, to season pork 1 Tbsp unsalted butter 2 Tbsp pink peppercorns 450 g pork medallions 1 cup port 1 cup red grapefruit juice (approx. 2 red grapefruit) 2 medium red grapefruit, segmented without membrane 400 g steamed green beans 400 g mashed sweet potato, made with 1/2 Tbsp butter and 80 mL skim milk Directions:Season pork medallions with cracked pepper and salt. Melt 1 tablespoon of butter in a heavy-based fry pan over a medium heat until bubbling and golden. Add peppercorns, swirl pan to combine ingredients. Cook pork for 3 minutes on either side for rare meat, longer for well done. Variations:Red wine can be used in place of port. Variation is not included in the nutritional analysis. Author:
