Ingredients:
2 Tbsp oil
4 pork cutlets
2 tsp onion, thinly sliced
1 cloves garlic, crushed
3/4 tsp ground cardamon
1/4 tsp ground coriander
2 Tbsp brandy
1 tsp wine or cider vinegar
1/2 cup red wine
1/2 cup chicken stock, salt reduced
1/2 cup seedless grapes, halved
1 Tbsp chopped parsley
1 tsp chopped mint
Directions:
In a large frying pan heat oil. Add pork cutlets and quickly brown on both sides. Remove from pan.
Reduce heat to low and add onions and garlic. Stir occasionally until softened.
Add cardamon and coriander and cook for 1 - 2 minutes. Pour in brandy and vinegar. Cook for 1 - 2 minutes then add red wine and chicken stock. Cook for 4 minutes and reduce to simmer. Add pork cutlets. Spoon liquid over.
Cover and gently simmer until pork is tender, about 45 minutes. Place pork on a hot plate.Simmer liquid until thickened to a sauce. Stir in grapes, parsley and mint.Heat until just hot and pour over pork.
Serve with potatoes and green beans.
