Tasty strips of pork with snow peas.

Ingredients:

500 g pork stir-fry strips

2 tsp cornflour

1 Tbsp Shaoxing rice wine or dry sherry (optional)

2 Tbsp soy sauce, salt reduced

2 Tbsp peanut oil

2 garlic cloves, chopped

1 cm piece of fresh ginger, chopped

1 small red chilli (to taste), seeded and sliced

6 spring onions, cut into bite size pieces

180 g snow peas, halved

2 Tbsp oyster sauce (to taste) (For Sauce)

1 tsp sugar (For Sauce)

1/2 cup salt-reduced chicken stock (125 mL)


Directions:

Gather all equipment and prepared ingredients.

Mix sauce ingredients together (oyster sauce, sugar, stock). Combine pork with cornflour, rice wine, soy sauce and marinate for 10 minutes.

Heat wok or fry pan until hot. Add a drizzle of oil, stir-fry garlic, ginger and chilli until fragrant. Stir-fry pork in 1-2 batches for about a minute and remove.

Add a little more oil, stir-fry spring onions and snow peas for 30 seconds until hot, but still crisp. Return pork.

Push pork and vegetables to the side, mix and add sauce mixture, stir and bring to simmer. Mix together and heat through. Serve hot.

Variations:

Delicious served with steamed rice.

The whole family loved this one. I used fresh beans instead of snow peas as the snow peas at my local store were poor quality. I added unsalted cashews and upped the calorie count to compensate. It was easy to make and the whole family loved it. This will be a regular.
