Tender pork schnitzels in a citrus sauce.
Suggestions:
Best served immediately garnished with chopped spring onions and orange slices.

Ingredients:
2 garlic cloves, crushed
4 pieces pork schnitzel (500g)
2 oranges
2 Tbsp brandy
1 Tbsp cornflour
2 Tbsp spring onion, chopped
1 Tbsp olive oil
Directions:Stir-fry garlic with oil in a heavy based fry pan for 2 to 3 minutes.
Trim all visible fat from pork schnitzels. Add to fry pan and brown on each side for 2 to 3 minutes.
Reduce heat to very low, add the juice of 1 orange plus the brandy.
Cover and simmer for 25 minutes while basting periodically.
Finely slice remaining orange.
Remove pork from pan and transfer to a serving dish; keep warm.
Mix cornflour with a little water and add to pan juices.
Cook and stir until thick and clear, pour over schnitzels. Serve immediately.
Microwave Directions:
Heat a covered microwave browning dish according to directions.
Add oil and garlic, cover and cook for 1 minute on HIGH.
Add pork, cover and brown on HIGH for 2 minutes on each side.
Add juice of one orange plus brandy, cover and reduce heat to MEDIUM LOW and cook for 30 minutes. Stop and baste periodically with pan juices.
Remove pork from pan and place in a serving dish. Finely slice remaining orange.
Mix cornflour with a little water to form a paste and add to the pan juices. Cover and heat on HIGH for 2 minutes.
Pour over schnitzels and serve decorated with sliced orange and spring onions.
Variations:
Substitute 1 tablespoon of Grand Marnier for brandy.
Not suitable for strict low cholesterol diets but if lean, well-trimmed pork is used, recipe could be had occasionally.
