
Pork Chops with a Curry Custard Apple Glaze

Ingredients:2 medium pork chops, trimmed of fat, 400g 1/2 tsp salt & ground black pepper 2 tsp butter, light 2 tsp hot curry powder 1 tsp fresh ginger, grated 60 g mango or fruit chutney 1 tsp mustard powder 1/4 tsp cinnamon 1/2 cup custard apple flesh 1/2 lemon, juiced Directions:Lightly spray a frying pan with cooking spray. Season the pork chops with salt and pepper and cook until golden all over, 3 - 4 minutes each side. Remove from heat and keep warm. Variations:Serve on a bed of wilted spinach with steamed squash.
