Low fat adaptation of a popular pasta dish.

Suggestions:

Using low fat cream, a very small amount of oil, and carefully trimmed bacon, this should not be too high in fat.

Ingredients:

200 g fresh fettuccine

1 quick spray of oil

1 small onion, diced

2 tsp minced garlic

40 g 97% Fat Free Ham (e.g. Han's), chopped

125 g sliced mushrooms

2 Tbsp sliced sundried tomatoes (not in oil)

1 can (375ml) light evaporated milk

1 Tbsp grated parmesan cheese

2 Tbsp chopped parsley

1/2 tsp pepper (or to taste)


Directions:

Cook pasta as per directions.

While pasta is cooking, spray non-stick frying pan with oil and heat oil over medium heat . Add onion and garlic, saute until onion is transparent. Add mushrooms, sun-dried tomatoes, ham, parmesan cheese, parsley and evaporated milk. Simmer gently for 5 mins. Season to taste.

Spoon over pasta; serve immediately with parsley.

Variations:

Serve with garlic bread.
