Mushroom, Bacon and Avocado Pasta

Pasta tastes great topped with this delicious combination of ingredients.

Ingredients:

5 lean rashers shoulder bacon

4 cup vegetable stock, salt-reduced

1 1/2 cup penne pasta

1 Tbsp butter

3 spring onions, chopped

2 cloves garlic, crushed

1 cup mushrooms, sliced

1 avocado, sliced

2 Tbsp fresh oregano, chopped


Directions:

Preheat oven to 220ºC. Cut bacon into thick strips and lay on a non-stick baking tray. Bake for 15 minutes.

Meanwhile, bring stock to the boil in a saucepan. Add pasta. Cook for 12 minutes. Drain.

Heat butter in a non-stick frypan. Add spring onion, garlic and mushrooms. Fry for 3 minutes. Add pasta and roasted bacon to the frying pan. Stir well. Gently fold in sliced avocado and oregano. Serve immediately.
