
Pork Curry

Ingredients:400 g lean neck of pork 1 small onion (60g), finely chopped 1 small carrot (50g), finely chopped 1 stick celery (30g), finely chopped 1/2 apple (30g), finely chopped 1 Tbsp curry powder 2 Tbsp flour 300 mL chicken stock, fat free 1 tsp 'Lite' salt and pepper to taste 1/2 Tbsp chutney 1 Tbsp unsweetened lime or lemon juice cordial Directions:Remove all visible fat from pork and cut meat into 2.5cm cubes.
