Pork Curry

A sweet curry enhanced with apple and chutney.

Ingredients:

400 g lean neck of pork

1 small onion (60g), finely chopped

1 small carrot (50g), finely chopped

1 stick celery (30g), finely chopped

1/2 apple (30g), finely chopped

1 Tbsp curry powder

2 Tbsp flour

300 mL chicken stock, fat free

1 tsp 'Lite' salt and pepper to taste

1/2 Tbsp chutney

1 Tbsp unsweetened lime or lemon juice cordial


Directions:

Remove all visible fat from pork and cut meat into 2.5cm cubes.

Cook meat in a non-stick pan together with onion, carrot, celery, apple and curry powder until well browned.

Combine flour, stock and seasoning and add to pan. Bring to the boil, reduce heat, cover and simmer gently for 1 1/2 hours or until meat is tender.

Just before serving, add chutney and lemon or lime juice.

Serve with boiled rice.

Variations:
